Fermented black soya beans, soaked in water, steamed, preserved in salt and flavoured with ginger. A rich umami taste and pungent smell, with a distinctive salty flavour. Can be ground to a paste to introduce salty flavours to sauces. Often paired with flavours like garlic, chilli, and root ginger, in dishes that include poultry, pork and seafood. Simply rinse the beans, or mash to a paste before cooking.
